Preparation method
- Process the mango in a blender until you have a smooth purée
- Set the purée aside
- Whisk the egg whites in a stand mixer until they become frothy
- Gradually add the sugar while continuing to whip until stiff peaks form
- Set the stiff egg whites aside
- Pour the water into a small bowl and sprinkle the gelatin over it
- Let the mixture hydrate for 1 minute
- Heat the gelatin over a double boiler until it is completely dissolved
- Fold the dissolved gelatin into the mango purée
- Stir the yogurt and lime zest into the purée until the mixture is homogeneous
- Gently fold the stiff egg whites into the mango cream using a spatula
- Distribute the mixture into individual bowls or glasses
- Refrigerate for at least 4 hours before serving
- Garnish with thin slices of mango just before serving
Observations
This recipe is a fantastic choice for a light finish to any meal. Whipped egg whites provide an airy consistency, while the yogurt creates the perfect harmony between the sweetness of the mango and the zesty freshness of lime.
