Where to find ingredients
Find fresh shrimp at local Suva or Lautoka municipal markets, or at quality seafood counters in major supermarkets like RB Patel or New World. Annatto (urucum) can be found as 'achiote' or annatto powder in the spice aisle or at ethnic/specialty grocery stores. For 'requeijão', which is a unique Brazilian creamy spread, if you cannot find an imported Brazilian brand at specialized shops, a thick, mild cream cheese like Philadelphia is the best local substitute. Use fresh garden coriander and spring onions, which are widely available at any local vegetable stall.
Preparation method
- Thoroughly clean the shrimp and let them marinate in lemon juice and salt for about 20 minutes
- Rinse the shrimp well and drain all excess liquid
- In a large pan or pot, sauté the minced garlic in olive oil until golden
- Add the chopped onion, annatto powder, and diced tomatoes to the pan
- Cook over medium heat until the onions are soft and translucent
- Stir in the tomato sauce, beef bouillon powder, and fresh basil
- Add the butter and the shrimp into the pot
- Simmer on low heat for approximately 30 minutes, giving it an occasional stir
- Fold in the cream cheese and continue cooking for about 10 minutes, stirring constantly until the sauce thickens nicely
- If needed, whisk the cornstarch into a small amount of the sauce liquid before adding it back to the pan, cooking for another 3 minutes
- Stir in the freshly chopped coriander and spring onions
- Remove from the heat and gently fold in the heavy cream
- Mix carefully until you have a smooth, homogeneous, and velvety cream
