Ingredients
1 can (approx. 560g) pineapple slices in syrup
1 can (300ml) sweetened condensed milk
2 cans (using the empty condensed milk can as a measure) whole milk
1 tbsp cornstarch
2 egg yolks
1 package (approx. 200g) ladyfinger biscuits (savoiardi)
1 package (100g) desiccated coconut
1 can (300ml) sweetened condensed milk
2 cans (using the empty condensed milk can as a measure) whole milk
1 tbsp cornstarch
2 egg yolks
1 package (approx. 200g) ladyfinger biscuits (savoiardi)
1 package (100g) desiccated coconut
Where to find ingredients
Find the pineapple slices, sweetened condensed milk, and desiccated coconut in the canned fruit and baking aisles of any major grocery store. Ladyfinger biscuits (often labeled as Savoiardi) can be found in the international or cookie aisles. If you cannot find ladyfingers, plain vanilla wafers or sponge cake fingers are common substitutes.
Preparation method
- In a heavy-bottomed saucepan, whisk together the sweetened condensed milk and the milk.
- Stir in the cornstarch until completely dissolved.
- Add the egg yolks and mix until well combined.
- Place the pan over medium heat, stirring constantly until the mixture reaches a boil and thickens into a silky custard.
- Remove from heat and let it cool slightly.
- Spread a thin layer of the prepared custard across the bottom of a glass baking dish.
- Briefly dip the ladyfinger biscuits into the reserved pineapple syrup, being careful not to let them get too soggy.
- Arrange a single layer of the soaked biscuits over the base of the custard.
- Evenly distribute the pineapple slices over the biscuit layer.
- Sprinkle a portion of the desiccated coconut over the fruit.
- Cover the assembly with the remaining custard, spreading it smoothly to the edges.
- Top the dessert with the remaining desiccated coconut.
- Refrigerate for at least three hours to allow it to set and firm up before serving.
Observations
This pineapple dessert is a beloved staple that masterfully plays the sweetness of sweetened condensed milk against the tartness of the fruit. After chilling, it develops a smooth, light texture that is consistently satisfying.
