Where to find ingredients
Look for bulgur wheat, fresh herbs, tomatoes, cucumbers, lemons, olive oil, salt, black pepper, and nutmeg in the produce section, bulk grains aisle, and spice aisle of local supermarkets or fresh market stalls. If bulgur is unavailable, fine cracked wheat can be used as a substitute, but bulgur remains the ideal ingredient.
Preparation method
- Place the bulgur in a bowl
- Cover with water and let it soak for 2 hours
- Rinse the bulgur under running water
- Drain well
- Squeeze the bulgur with your hands to remove all excess moisture
- Run the chopped onion under cold water and drain
- Mix the bulgur, onion, and the remaining ingredients
- Set aside only the tomato for the final step
- Cover the bowl and refrigerate for at least 8 hours
- Stir in the chopped tomatoes just before serving
Observations
This recipe balances the texture of the bulgur with the freshness of the vegetables and aromatic herbs. Chilling the salad is essential so the flavours meld perfectly.
