You can find fresh zucchini and cilantro at local village markets or greengrocers. If coriander seeds are unavailable, ground coriander is a suitable substitute, though freshly crushed seeds provide the best flavor.
Preparation method
- Thoroughly wash the zucchini skin under running water using a vegetable brush
- Pat dry with a clean kitchen towel
- Trim and discard the ends
- Cut the zucchini crosswise to separate the thicker end from the thinner one
- Slice the thicker portion in half lengthwise, then cut each half into three strips to create batons
- Cut the thinner portion in half crosswise so all pieces have similar dimensions
- Slice each of these remaining pieces into quarters
- Heat a non-stick skillet over medium heat
- Add a drizzle of olive oil and place the zucchini pieces cut-side down
- Grill for about 2 minutes until golden brown
- Lightly crush the coriander seeds in a mortar to release their aroma
- Turn the batons using tongs to brown the opposite side
- Add the crushed coriander seeds, season with salt, and drizzle with a little more olive oil
- Sauté for 1 more minute until the zucchini is tender and well-seasoned
- Finish by turning off the heat and stirring in the lemon or lime juice
- Serve immediately
