Where to find ingredients
You can find fresh squash and produce at local farmers' markets or supermarkets. For a substitute for the butternut squash, any firm-fleshed winter squash variety can be used.
Preparation method
- Peel the pumpkin and cut the flesh into 2 cm cubes.
- Mince the garlic cloves finely.
- Place a large pot or skillet over medium heat with the olive oil.
- Add the garlic and sauté for 1 minute just to scent the oil, being careful not to burn it.
- Add the pumpkin cubes and salt to the pot.
- Stir the ingredients occasionally for 10 minutes, until the pumpkin begins to soften.
- Place the lid on the pot and reduce the heat to low.
- Cook for 5 minutes so the pumpkin finishes softening in its own steam.
- Remove the lid and continue stirring while mashing the pieces with the back of a wooden spoon, until you reach your preferred texture.
- Turn off the heat and serve immediately.
