1 tin of condensed milk
2 measures (using the empty tin) of full-cream milk
1 tablespoon of instant coffee powder
1 tablespoon of coffee liqueur or rum (optional)
White sugar for caramelising the mould
Where to find ingredients
Most ingredients like eggs, milk, and sugar are readily available at any local supermarket like Choppies or Spar. For the condensed milk, look in the canned goods or baking aisle. Instant coffee is found in the tea and coffee section of any grocery shop. Coffee liqueur or rum can be purchased at local bottle stores or the spirits section of larger retailers. If you have trouble finding specific coffee liqueur, a dark rum is a great substitute that complements the coffee flavour perfectly.
Preparation method
- Prepare the caramel by melting sugar directly in your pudding mould over low heat, coating the base and sides evenly
- Add the eggs, condensed milk, milk, instant coffee, and the liqueur (if using) into a blender
- Blitz all the ingredients until you have a smooth, well-combined mixture
- Pour the mixture into your caramel-lined mould
- Cover the mould tightly with aluminium foil
- Bake in a bain-marie (water bath) in a preheated oven at 180°C for about 1 hour, or until the custard is set
- Remove from the oven and allow it to cool completely before placing it in the fridge
- Once chilled, carefully turn the pudim out onto a serving plate
- Serve chilled and enjoy
