Where to find ingredients
You can source these ingredients at local butchers and supermarkets in Gaborone or other major towns. Look for fresh pork ribs and chicken at the meat counter. Tripe is commonly available at butcher shops. For the beans, dried white beans are found in the pantry staples aisle, or canned as a shortcut. Farofa is a Brazilian toasted cassava flour specialty, which may need to be sourced from specialty international grocers if not available locally.
Preparation method
- Boil the white beans in a standard pot until they reach a tender texture.
- Drain the cooked beans and set them aside.
- Boil the tripe in water for approximately 40 minutes.
- Drain the tripe thoroughly and set aside.
- In a large heavy-bottomed pot, fry the bacon until crisp and golden.
- Add the onion and garlic to the bacon and sauté until lightly golden and fragrant.
- Incorporate the pork ribs and chicken pieces into the pot.
- Sear the meats thoroughly until browned on all sides.
- Pour the chicken stock over the browned meats.
- Simmer the mixture until the meats are cooked to an al dente stage.
- Stir the pre-cooked beans and the prepared tripe into the pot.
- Add the chopped potatoes to the stew.
- Continue to cook until the potatoes are tender and the broth has thickened and concentrated.
- Finish the dish by sprinkling fresh chopped parsley over the top.
- Serve hot, ideally accompanied by steamed white rice and farofa.
Observations
This robust stew makes for a fantastic family lunch. The secret to achieving the perfect depth of flavor lies in the patient, careful preparation of the meats, ensuring they are tender and well-seasoned, resulting in a hearty and deeply satisfying dish.
