Loaded Accordion Potatoes (Batata recheada)

Ingredients

20 medium potatoes
2 1/2 cups requeijão
1 packet Catupiry-style cream cheese
3 packets bacon, diced or thinly sliced
Fresh parsley, chopped to taste
Olive oil for greasing

Where to find ingredients

You can find fresh potatoes, bacon, and parsley at any local Australian supermarket like Woolworths or Coles in the produce and deli sections. For requeijão and Catupiry, look in the specialty international aisle or visit a local Brazilian grocer; as a substitute, you can use a high-quality cream cheese mixed with a little heavy cream if necessary.

Preparation method

  1. Boil the medium potatoes in their skins until tender but still firm.
  2. Drain the potatoes and allow them to cool slightly.
  3. Cut the cooked potatoes into thick slices, without cutting all the way through, accordion-style.
  4. Grease a baking tray with olive oil.
  5. Arrange the potatoes on the baking tray.
  6. In a mixing bowl, combine the requeijão, Catupiry, and bacon.
  7. Stuff the slices of each potato with the requeijão and bacon mixture.
  8. Sprinkle the chopped parsley over the top.
  9. Cover the baking tray with aluminium foil.
  10. Bake in a preheated oven at 180°C for approximately 20-25 minutes, or until the filling is well-heated and bubbling.
  11. Serve warm.
