Ingredients
1 cup long-grain white rice
2 cups water
1 tablespoon olive oil
1/2 brown onion
1 bay leaf
1/2 teaspoon salt
zest of 1 lemon
2 cups water
1 tablespoon olive oil
1/2 brown onion
1 bay leaf
1/2 teaspoon salt
zest of 1 lemon
Where to find ingredients
Find long-grain white rice in the rice aisle of any major supermarket like Coles or Woolworths. For the best result, use a fresh, firm lemon from the produce section. Brown onions and bay leaves are standard pantry staples available at all local grocers. If you want high-quality olive oil, look for extra virgin options in the baking and oil aisle of your local supermarket.
Preparation method
- Peel the onion and finely dice it
- Pour the water into a kettle and bring to a boil over low heat
- Warm a medium saucepan over low heat
- Add the olive oil and chopped onion
- Season with a pinch of salt
- Sauté for about 2 minutes until the onion is soft
- Add the bay leaf and rice to the pan
- Stir for approximately 1 minute to ensure the grains are coated in oil, which helps keep the rice fluffy
- Measure 2 cups of the boiling water and pour over the rice
- Add the remaining salt and stir briefly
- Increase the heat to medium
- Avoid stirring from this point on
- Let the water evaporate until it reaches the level of the rice grains
- Reduce the heat to low and cover the pan partially
- Cook until all the water has been absorbed
- Check the bottom of the pan with a fork to ensure all the water has fully evaporated
- Turn off the heat
- Add the lemon zest
- Cover the pan completely with a lid
- Let the rice rest and steam for 5 minutes
- Use a fork to fluff the rice and incorporate the zest
- Transfer to a serving bowl and serve immediately
