Where to find ingredients
Find long-grain white rice, sultanas, and fresh produce in the aisles of any local supermarket. You can source Parmesan and fresh herbs from the dairy or fresh produce sections. If you cannot find fresh sultanas, dried currants or golden raisins are a suitable substitute.
Preparation method
- In a medium saucepan, combine the water, salt, and a dash of oil, then bring to a boil.
- Once the water reaches a boil, stir in the washed and drained rice.
- Give the mixture a gentle stir.
- Reduce the heat to a low simmer.
- Cook until all the water has been absorbed by the rice.
- Remove the pot from the heat.
- Keep the lid on the pot and let the rice steam for a few minutes to finish.
- In a separate pan, melt the butter and lightly sauté the sultanas.
- Transfer the sautéed sultanas into a large mixing bowl.
- Add the prepared spring onions, carrot, capsicum, and onion to the bowl.
- Fold in the fresh parsley and the grated Parmesan cheese.
- Tip the cooked rice over the vegetable and fruit mixture in the bowl.
- Toss everything together delicately until all components are evenly combined.
Observations
This simple, versatile dish elevates everyday white rice into a colourful and sophisticated side. It is the perfect accompaniment for roast meats or can easily stand alone as a light, textured meal. By gently folding sautéed aromatics and fresh produce into the cooked grains, you create an irresistible aroma and a delightful blend of flavours in every bite.
