Where to find ingredients
You can find these ingredients at local supermarkets such as Coles or Woolworths. The seafood section stocks prawns, while canned or jarred 'palmito' (palm hearts) is typically located in the international or canned vegetable aisle. For the best result, opt for premium Arborio or Carnaroli rice found in the grains section.
Preparation method
- Heat the oil in a large heavy-based pan and sauté the onion until translucent.
- Add the garlic and sauté for another 30 seconds.
- Add the prawns and cook until pink and firm, about 3 to 4 minutes.
- Remove the prawns from the pan and set aside.
- In the same pan, add the rice and toast for 1 minute, stirring constantly.
- Add a ladle of hot stock or water and cook, stirring continuously until the liquid is almost absorbed.
- Repeat this process, adding liquid gradually until the rice is al dente and creamy.
- In the last few minutes of cooking, stir in the tomato, palm hearts, peas, and the cooked prawns.
- Mix well, adjust seasoning with salt and pepper, and finish with chopped parsley.
- Serve hot, garnished with extra parsley if desired.
