Preparation method
- Peel and finely dice the onion.
- Wash the parsley, dry thoroughly, and chop it coarsely.
- Pour slightly more than 2 cups of water into a kettle and bring to a simmer.
- Heat a medium-sized heavy-based saucepan over low heat.
- Add the olive oil and the diced onion.
- Season with a pinch of salt and sauté for about 2 minutes until the onion is softened and translucent.
- Add the bay leaf and the rice to the saucepan.
- Stir continuously for 1 minute to ensure the grains are well coated in the olive oil.
- This process helps to keep the grains distinct and fluffy after cooking.
- Measure exactly 2 cups of the boiling water and pour it over the rice.
- Season with the remaining salt and stir to combine.
- Turn the heat up to medium.
- Avoid stirring the rice from this point onwards.
- When the water level reaches the surface of the rice, lower the heat and partially cover the pan with a lid.
- Cook until all the water has been absorbed.
- Check if the bottom of the pan is dry by gently nudging the grains with a fork.
- Turn off the heat.
- Keep the lid on for 5 minutes to allow the steam to finish the cooking process.
- Use a fork to fluff the rice, fold in the chopped parsley and mix gently.
- Serve immediately.
