Light Homemade Feijoada (Feijoada light)

Ingredients

150 g black beans
100 g frozen loin
150 g salted loin
100 g lean dried beef
2 bay leaves
1 medium onion, chopped
2 cloves garlic, chopped
Chopped fresh spring onions and coriander to taste
1 tbsp unsalted light margarine

Where to find ingredients

Look for black beans, beef, and herbs at local supermarkets, butchery counters, and fresh produce stalls; ask the deli or meat section for lean cuts. If needed, use unsalted margarine as a substitute for light margarine.

Preparation method

  1. Soak the black beans in water the day before.
  2. The next day, soak the salted meats in water, changing the water several times.
  3. Boil the salted meats in clean water and discard the water.
  4. Repeat the boil-and-drain process until the meats are less salty.
  5. Boil the meats again in clean water. If the water becomes greasy, place it in the freezer or fridge; the hardened fat on the surface can be removed with a spoon.
  6. Use this cooking liquid to cook the beans.
  7. In a pot, cook the black beans with the desalted meats and the bay leaves until the beans and meats are tender.
  8. While the beans cook, prepare a sauté in a non-stick frying pan with the light margarine.
  9. Add the chopped onion and sauté until translucent.
  10. Add the chopped garlic and sauté for another minute.
  11. Stir the chopped spring onions and coriander into the sauté.
  12. Add this sauté to the bean pot.
  13. Check the salt and adjust if needed.
  14. Serve the feijoada hot.

Observations

Feijoada is one of the most iconic dishes in Brazilian cooking: a hearty, flavourful stew of black beans with a variety of meats. This light version adapts the traditional recipe to make it a little lighter, using lean cuts and techniques that reduce the fat content without losing its distinctive taste.

It is a great choice for anyone who wants to enjoy this classic in a healthier way, ideal for a weekend lunch or a comforting meal. The method involves soaking the meats to remove excess salt and cooking everything together until the stew reaches the perfect consistency.
