6 corn cobs
3 cups of milk
4 tablespoons of all-purpose flour
1 egg yolk (membrane removed)
Grated Parmesan cheese
3 cups of milk
4 tablespoons of all-purpose flour
1 egg yolk (membrane removed)
Grated Parmesan cheese
Where to find ingredients
You can find fresh sweet corn, milk, eggs, flour, and Parmesan cheese at local markets and grocery stores. For the Parmesan, aged hard cheese is a suitable substitute if specific brands are unavailable.
Preparation method
- Thoroughly wash the corn cobs and remove all the silk threads
- Cut the kernels off the cobs with a knife and set them aside in a bowl
- Place the corn kernels and the milk in a blender
- Blend the mixture well
- Add the all-purpose flour to the blender
- Blend again to incorporate
- Pass the mixture through a fine-mesh sieve to remove the fiber
- Transfer the liquid to a saucepan and place over low heat
- Stir constantly until thickened to prevent the dough from forming lumps
- Transfer the cream to a dish and let it cool completely
- Mix the egg yolk into the cooled dough
- Work the dough with hands dusted in flour
- Shape the dough into long cylinders on a surface dusted with flour
- Cut the cylinders into small pieces, typical of gnocchi size
- Cook the pieces in boiling water until they rise to the surface
- Remove the gnocchi from the water and place in a serving dish
- Cover with your sauce of choice
- Finish by sprinkling the Parmesan cheese on top
- Place in the oven just long enough to gratinate and brown
Observations
This recipe uses fresh sweet corn to create a light and flavorful dough. The key lies in constant stirring while cooking the base to reach the perfect consistency before shaping and finishing it in the oven.
