1/2 tsp salt
2 cups boiling water
1/2 onion
1 bay leaf
1 whole clove
1 cup long-grain brown rice
1/2 tsp salt
2 cups boiling water
Where to find ingredients
You can find long-grain brown rice, fresh aromatics, and olive oil at local grocery stores or markets in Port Vila and throughout the islands. If you cannot find a whole clove, simply stir in a tiny pinch of ground cloves.
Preparation method
- Keep the half onion intact.
- Attach the bay leaf to the onion using the clove as a pin.
- Heat the pressure cooker over medium heat, leaving the lid off.
- Add the olive oil, the prepared onion bundle, and the rice to the pot.
- Season with the salt.
- Sauté the grains for 1 minute until well coated in the oil.
- Pour in the boiling water and stir thoroughly.
- Seal the pressure cooker lid and increase the stove heat to high.
- Once the cooker reaches full pressure and starts whistling, lower the heat.
- Continue cooking for 15 minutes.
- Turn off the heat and allow the pressure to release naturally before opening the lid.
- Fluff the rice gently with a fork and serve immediately.
Observations
Using a pressure cooker cuts down the cooking time for brown rice significantly. This method yields a delicious and wholesome side dish, making it a highly practical way to incorporate nutrient-dense grains into your daily routine.
