Ingredients
2 cups cooked rice
4 cups water
2 chicken stock cubes
3 skinless tomatoes
1 tablespoon tomato paste
2 eggs
3 tablespoons grated parmesan or tasty cheese
100g chopped ham
100g diced mozzarella
4 cups water
2 chicken stock cubes
3 skinless tomatoes
1 tablespoon tomato paste
2 eggs
3 tablespoons grated parmesan or tasty cheese
100g chopped ham
100g diced mozzarella
Where to find ingredients
You can find all these staples at any local grocery store or supermarket in Vanuatu. For the stock cubes and tomato paste, check the pantry aisles. Fresh tomatoes are easily sourced from local markets. The ham and mozzarella can be found in the refrigerated deli or dairy section. If you want a more authentic flavour, look for a standard semi-hard cheese in the deli section as a substitute for standard Brazilian 'queijo ralado'.
Preparation method
- Dissolve one of the chicken stock cubes in a little hot water
- Place the skinless tomatoes, tomato paste, and the dissolved stock into a blender
- Whizz everything until you have a smooth, well-blended sauce
- Cook the rice in a pot with the 4 cups of water and the remaining stock cube for 15 minutes
- Lightly beat the eggs in a mixing bowl
- Stir the grated cheese, chopped ham, and diced mozzarella into the bowl with the eggs
- Fold this mixture into the warm cooked rice
- Spread a layer of the blended tomato sauce over the base of a baking dish
- Distribute the rice mixture evenly over the sauce layer
- Pour the remaining tomato sauce over the top of the dish
- Bake in a preheated oven at 180°C for 10 to 15 minutes, or until the top is bubbling and nicely golden
Observations
This recipe is the perfect solution for giving leftover rice a new life as a hearty, standalone meal. You’ll end up with a creamy, golden-brown bake that is just the thing for a relaxed family lunch or dinner.
