Where to find ingredients
Find the ingredients in the rice aisle, fresh produce section, and spice shelf of your local supermarket or market; limes and onions are usually sold loose in the produce section.
Preparation method
- Peel the onion and chop it into very small pieces
- Place the water in a kettle and bring it to a boil over low heat
- Heat a medium saucepan over low heat
- Add the olive oil and the chopped onion
- Season with a pinch of salt
- Sauté for about 2 minutes until the onion softens
- Add the bay leaf and the rice to the pan
- Stir for about 1 minute so the grains are coated with the olive oil, which helps keep the rice fluffy
- Measure out 2 cups of the boiling water and pour it over the rice
- Season with the remaining salt and stir
- Increase the heat to medium
- Do not stir from this point on
- Wait until the water dries down to the level of the grains
- Lower the heat and partially cover the pan
- Cook until all the water is absorbed
- Check the bottom of the pan with a fork to make sure the water has dried out completely
- Turn off the heat
- Add the lime zest
- Cover the pan completely
- Let the rice rest in the steam for 5 minutes
- Use a fork to separate the grains and mix in the zest
- Transfer to a bowl and serve immediately
