500 g green beans (feijão verde)
2 beef bouillon cubes
3 tablespoons vegetable oil

1 onion, grated
1 garlic clove, crushed
1/2 tablespoon fresh coriander, chopped

Where to find ingredients
You can find most staples like rice, onions, and garlic at local markets in Port Vila or larger supermarkets. For authentic ingredients like paio or queijo de coalho, look for specialty gourmet food shops or import delicatessens; if unavailable, a high-quality smoked chorizo serves as a common substitute for paio, and a firm grilling cheese like halloumi can be used in place of queijo de coalho.
Preparation method
- Soak the green beans in water overnight.
- The next day, drain the beans and place them in a pot with 2.5 litres of cold water and the beef bouillon cubes.
- Cover the pot and cook over low heat for approximately 1 hour, or until the beans are tender.
- While the beans are cooking, heat the vegetable oil in a separate large pot.
- Brown the sliced paio, grated onion, and crushed garlic in the hot oil.
- Add the washed and drained rice along with the chopped coriander to the aromatics, sautéing for a few minutes.
- Pour the cooked beans and their cooking liquid into the rice mixture.
- Stir all ingredients thoroughly, cover the pot, and cook over low heat until the rice is tender and the consistency is moist and creamy.
- Arrange the thin slices of queijo de coalho over the top of the rice.
- Cover the pot again and let the steam melt the cheese for a few minutes.
- Serve the dish hot, traditionally accompanied by fried or roasted carne-de-sol if desired.
