2.5 liters of cold water
500 g of green beans (feijão verde)
2 meat bouillon cubes
3 tablespoons of vegetable oil
1 paio sausage, sliced
1 onion, grated
1 garlic clove, crushed
1/2 tablespoon of chopped cilantro
2 1/2 cups of white rice
150 g of queijo coalho, thinly sliced

Preparation method

  1. Soak the green beans in water overnight.
  2. The next day, drain the beans and cook them in a pot with 2.5 liters of cold water and the bouillon cubes.
  3. Cover the pot and cook over low heat for approximately 1 hour, or until the beans are tender.
  4. While the beans are cooking, heat the oil in a separate pot.
  5. Brown the sliced paio, grated onion, and crushed garlic in the oil.
  6. Add the washed and drained rice and the chopped cilantro to the sauté, cooking for a few minutes.
  7. Combine the cooked beans with their cooking liquid into the rice mixture.
  8. Mix all ingredients, cover the pot, and cook over low heat until the rice is tender and the mixture is moist and creamy.
  9. Arrange the thin slices of queijo coalho over the top of the rice.
  10. Cover the pot again and let the steam melt the cheese for a few minutes.
  11. Serve the Baiao de Dois hot, accompanied by fried or roasted carne-de-sol, if desired.
