Ingredients
100 g dried shredded coconut
120 ml warm water
4 eggs
3 egg yolks
400 g sugar
30 g butter
120 ml warm water
4 eggs
3 egg yolks
400 g sugar
30 g butter
Where to find ingredients
You can find shredded coconut and eggs at any local supermarket or neighborhood produce market (soko). Specialized baking supply shops also carry these ingredients in various sizes.
Preparation method
- Mix the shredded coconut with the warm water in a small bowl
- Let the coconut soak for about 5 minutes until it is well hydrated
- Place the hydrated coconut, whole eggs, egg yolks, sugar, and butter in a blender and pulse just enough to combine
- Grease a 1.5-liter microwave-safe dish with butter and sprinkle with sugar, then pour the mixture in
- Microwave on medium power for 9 to 12 minutes until the Quindão begins to set
- Remove from the microwave, let it cool down slightly, and carefully unmold onto a serving plate
- Wait until it is completely cool before serving to ensure the ideal texture
Observations
The Quindão is a larger and highly popular variation of the traditional quindim. This simplified version uses the microwave to ensure speed without losing the characteristic flavor of coconut and eggs. Tip: use a microwave-safe mold to ensure even cooking.
