Where to find ingredients
In the United States, you can find okra, red bell pepper, red onion, garlic, canned peeled tomatoes, cumin seeds, olive oil, salt, and black pepper at most supermarkets, grocery stores, farmers markets, and produce markets.
Preparation method
- Wash the okra and dry it carefully with a clean kitchen towel
- Trim the ends and slice each okra pod diagonally into 1/2-inch pieces
- Set the sliced okra aside
- Finely chop the onion and garlic
- Cut the bell pepper in half, remove the seeds, and chop half of it into 1/2-inch cubes
- Lightly crush the cumin seeds in a mortar and pestle to release their aroma
- Heat a medium saucepan over medium heat with the olive oil
- Add the onion and bell pepper
- Season with a pinch of salt and saute for 3 minutes, until the vegetables soften
- Add the garlic and crushed cumin
- Stir everything for 1 minute, until fragrant
- Pour in the water and stir well to loosen the flavorful bits from the bottom of the pan
- Stir in the peeled tomatoes with their liquid
- Season with 1 teaspoon salt and black pepper to taste
- Let the mixture come to a boil over medium heat
- Reduce the heat and cook for 5 minutes, stirring occasionally, until the sauce thickens
- Add the sliced okra to the pan
- Cook for another 6 minutes, stirring now and then, until the okra is lightly tender
- Avoid overcooking so the okra keeps its ideal texture
- Serve immediately
Observations
This stew combines okra's unique texture with an aromatic, well-seasoned sauce, making it an excellent side dish for everyday meals.
