Sweet Potato Cake with Coconut

Ingredients

1 kg sweet potato
100 g butter
3 eggs
100 g desiccated coconut
3 tablespoons sugar
1 tin sweetened condensed milk
1 tablespoon baking powder
Butter, for greasing
Icing sugar, for dusting

Where to find ingredients

Sweet potatoes are widely available at local markets and produce shops. For the desiccated coconut and condensed milk, look in the baking or long-life milk aisles of any local supermarket. If you cannot find desiccated coconut, freshly grated coconut can be used as a delicious, more textured alternative. Baking powder and basic pantry staples like butter and sugar are standard items found in any grocer or convenience store.

Preparation method

  1. Cook the sweet potatoes in a pressure cooker with 500 ml of water for approximately 20 minutes
  2. Peel the potatoes and pass them through a potato ricer or masher while they are still hot
  3. Add the butter to the mashed sweet potato and mix well
  4. Whisk in the eggs, folding them gently into the mixture
  5. Stir in the desiccated coconut and sugar until well combined
  6. Pour in the condensed milk and keep stirring until you have a smooth, consistent batter
  7. Finish by folding in the baking powder
  8. Transfer the mixture to a medium-sized rectangular baking tin that has been greased beforehand
  9. Bake in a preheated oven at 180°C for about 45 minutes
  10. Allow the cake to cool down completely
  11. Dust with icing sugar before cutting into squares to serve

Observations

This recipe delivers a dense and flavourful cake, making it the perfect treat to enjoy with a cup of afternoon tea. The sweet potato provides a naturally sweet base and a lovely moist consistency, while the coconut adds a subtle tropical flair that rounds it all off.
