Ingredients
100 g of dehydrated grated coconut
120 ml of warm water
4 eggs
3 egg yolks
480 g of sugar
30 g of butter
120 ml of warm water
4 eggs
3 egg yolks
480 g of sugar
30 g of butter
Where to find ingredients
You can find these ingredients at any local grocery store in the baking or produce aisles. If dehydrated coconut is unavailable, you may substitute it with fresh grated coconut using the same weight, although the texture will be slightly different.
Preparation method
- Mix the grated coconut with the warm water in a small bowl.
- Let the coconut rest for about 5 minutes until it is well hydrated.
- Place the hydrated coconut, eggs, egg yolks, sugar, and butter in a blender and pulse just enough to combine.
- Grease a 1.5-liter microwave-safe dish with butter and sprinkle with sugar, then pour the mixture in.
- Microwave on medium power for 9 to 12 minutes until the Quindão begins to set.
- Remove from the microwave, let it cool slightly, and carefully unmold onto a serving plate.
- Wait for it to cool completely before serving to ensure the ideal texture.
Observations
The Quindão is a larger and very popular variation of the traditional Quindim. This simplified version uses the microwave to ensure speed without losing the characteristic flavor of coconut and eggs. Tip: use a microwave-safe mold to ensure even cooking.
