Preparation method

  1. Preheat your oven to 220°C
  2. Peel the mandioca thoroughly, removing the waxy skin and the thick inner bark
  3. Cut the roots into large chunks, about 8 cm in length
  4. Give the pieces a good rinse under cold running water
  5. Place the washed mandioca chunks into a pressure cooker
  6. Add enough water to cover them, ensuring the cooker is no more than two-thirds full
  7. Seal the lid and bring to high pressure over high heat
  8. Once the pressure cooker begins to whistle or hiss steadily,
  9. turn the heat down and let it cook for exactly 5 minutes
  10. The target texture is tender but still firm enough to slice without falling apart
  11. Turn off the heat
  12. Allow the pressure to release naturally before opening the lid
  13. Drain the cooked pieces well in a colander
  14. Let them cool down slightly until they are comfortable to handle
  15. Grease a large roasting tray with half of the olive oil
  16. Slice the cooked mandioca chunks in half lengthwise
  17. Cut each half into rustic sticks, about 2 cm thick
  18. Arrange the sticks in the roasting tray in a single layer without overcrowding
  19. Drizzle the remaining olive oil over the top
  20. Season generously with salt and black pepper
  21. Roast in the oven for about 40 minutes
  22. Flip the sticks halfway through the cooking time to ensure an even golden finish on all sides
  23. Remove from the oven and serve immediately
