Where to find ingredients
Look for the ingredients at a neighbourhood wet market, supermarket, or the fresh produce, meat, and condiments aisles. If needed, use beef shin as a substitute for coxão duro.
Preparation method
- In the pressure cooker, heat the oil over high heat
- Sauté the chopped garlic and onion for 3 minutes, until golden
- Add the beef steaks and fry for 10 minutes, until they change colour
- Add the salt, flavour enhancer, tomato, capsicum, tomato paste and hot water
- Cover the pressure cooker and cook for 30 minutes after it starts boiling
- Remove the cooker from the heat and wait until the pressure has fully released
- Open the cooker, add the chopped parsley, mix and serve immediately
Observations
This pressure-cooked beef stew brings a delicious, easy variation of a classic Brazilian dish. Made in the pressure cooker, it gives you tender, flavour-packed beef in less time, making it ideal for busy weeknights.
The key is the initial sauté and the blend of seasonings that bring out the beef’s flavour, turning it into a versatile option that suits all tastes. Serve with white rice and a salad for a complete meal.
