1/2 cup strong brewed coffee
1 teaspoon ground cinnamon
1 teaspoon baking powder
3 cups sugar
500 g raw peanuts with skin
1 tablespoon cocoa powder
1 teaspoon ground cinnamon
1 teaspoon baking powder
3 cups sugar
500 g raw peanuts with skin

Where to find ingredients
In Singapore, raw peanuts, sugar, coffee, cinnamon, cocoa powder and baking powder can be found in supermarkets, wet markets and baking supply shops.
Preparation method
- In a pan, combine the sugar with the strong brewed coffee and place over medium heat
- Stir continuously until the sugar dissolves and the syrup starts to thicken
- Add the raw peanuts with skin, cocoa powder, cinnamon and baking powder to the pan
- Mix all the ingredients well in the hot syrup until the mixture starts to dry and pull away from the bottom of the pan
- As soon as it reaches the dry stage, remove the pan from the heat
- Pour the peanut mixture into a previously greased baking tray
- Place in a preheated oven at a very low temperature, about 120°C, for approximately 15 minutes
- During the oven time, stir the peanuts occasionally to prevent sticking and to ensure even drying
- Remove from the oven and let cool completely before serving or storing
Observations
This crunchy sweet peanut snack is typical of Brazil, combining roasted caramelised peanuts with the flavour of strong coffee, cinnamon and cocoa. It is made with a few ingredients and works well with coffee or as a quick sweet bite.
The recipe is straightforward: cook the syrup with the peanuts until dry, then finish in a low oven so the coating sets evenly.
