Ingredients
100g caster sugar
2 tbsp roasted cashew nuts, roughly chopped
2 medium papayas, ripe
250ml chilled heavy whipping cream
2 tbsp roasted cashew nuts, roughly chopped
2 medium papayas, ripe
250ml chilled heavy whipping cream
Where to find ingredients
You can find fresh papayas (look for the sweet, orange-fleshed varieties) at any local wet market or supermarket chain like NTUC FairPrice or Cold Storage. Roasted cashew nuts are easily available in the nut and snack aisle of most grocery stores. For the heavy whipping cream, head to the dairy section; ensure it is the type suitable for whipping (look for at least 35% fat content). If you can't find specific brands, any store-brand UHT or chilled whipping cream will work perfectly.
Preparation method
- Slice the papayas in half lengthwise and scoop out all the seeds using a spoon
- Scoop out the flesh of one papaya and blitz it in a food processor until smooth and pureed
- Dice the flesh of the second papaya into small, bite-sized pieces and set them aside
- Using a stand mixer or handheld whisk, beat the heavy whipping cream with the caster sugar until it reaches firm, stiff peaks
- Gently fold the papaya purée into the whipped cream, being careful to maintain the airy, light texture of the mixture
- Add the diced papaya pieces into the mixture and fold them in gently until well combined
- Pour the mixture into a shallow container or ice cube trays and pop it into the freezer for at least 4 hours until firm
- To unmould, quickly run the bottom of the container under warm water for a few seconds to loosen it up
- Scoop or cut the sorvete into serving bowls and garnish generously with the chopped roasted cashew nuts
- For an extra zing, squeeze a few drops of fresh lime juice over the top before serving to brighten the flavours
Observations
This papaya sorvete is a delightful Brazilian-style chilled dessert that perfectly balances the natural sweetness of papaya with a luscious, creamy texture. It is a fantastic option for our sweltering Singaporean weather—effortless to prepare and beautifully refreshing. By combining pureed papaya, chilled heavy whipping cream, and a handful of crunchy cashews, you get an irresistible dessert that’s elegant enough for gatherings or simply as a well-deserved weekend indulgence at home.
