Where to find ingredients
You can find most ingredients like fresh prawns, tomatoes, onions, and herbs at local wet markets or supermarket chains like NTUC FairPrice, Cold Storage, or Giant. For Brazilian-specific items: Look for 'Annatto powder' (colorau) in the spice aisle or at international grocers in areas like Little India. 'Requeijão' is a specific Brazilian creamy cheese; if you can't find the authentic Brazilian brand in specialty import shops, high-quality cream cheese or a thick spreadable processed cheese is the best substitute. 'Creme de leite' is commonly found as UHT all-purpose cream in the baking or dairy aisle. Beef bouillon powder is widely available in all local supermarkets.
Preparation method
- Clean the prawns thoroughly, then marinate in lemon juice and salt for about 20 minutes
- Rinse the prawns well and drain all excess water
- In a large heavy-based pan, sauté the minced garlic in olive oil until golden
- Stir in the diced onion, annatto powder, and chopped tomatoes
- Cook over medium heat until the onions are soft and translucent
- Pour in the tomato sauce, add the beef bouillon powder and chopped basil
- Add the butter and the prepared prawns to the pan
- Simmer on low heat for about 30 minutes, stirring every now and then
- Mix in the creamy cheese (requeijão) and cook for about 10 minutes, stirring until the sauce thickens
- If it needs extra thickness, dissolve the cornstarch in a small ladle of the pan's sauce, stir it back in, and cook for 3 more minutes
- Stir in the chopped coriander and spring onions
- Switch off the heat and gently fold in the cream (creme de leite)
- Stir carefully until the sauce is silky and perfectly blended
