Ingredients
1 envelope of unflavored powdered gelatin
6 tablespoons of cold water
1 can of sweetened condensed milk
1 can of whole milk (use the condensed milk can as a measure)
2 pots of plain yogurt
6 medium red guavas
1/2 cup of sugar
1 1/2 cups of water (for the syrup)
1/2 cup of water (optional, for the syrup)
6 tablespoons of cold water
1 can of sweetened condensed milk
1 can of whole milk (use the condensed milk can as a measure)
2 pots of plain yogurt
6 medium red guavas
1/2 cup of sugar
1 1/2 cups of water (for the syrup)
1/2 cup of water (optional, for the syrup)
Where to find ingredients
Find fresh red guavas at local fruit markets or specialty greengrocers. For dairy items and pantry staples, any standard supermarket will carry them. Guava paste (goiabada) may be used as a substitute for fresh guavas if necessary, but fresh fruit is preferred.
Preparation method
- Hydrate the powdered gelatin in 6 tablespoons of cold water
- Place the hydrated gelatin in a bain-marie until completely dissolved
- In a blender, mix the sweetened condensed milk, milk, plain yogurt, and the dissolved gelatin
- Pour the mixture into a center-hole mold that has been lightly moistened with water
- Refrigerate for approximately 4 hours, or until the flan is firm
- While the flan sets, prepare the syrup: peel and cut the guavas into cubes
- Place the guava cubes in a saucepan with the sugar and 1 1/2 cups of water
- Cook over low heat for about 20 minutes, or until the guavas are very soft and starting to break down
- Remove the pan from the heat and transfer the contents to a blender. Blend until you obtain a smooth purée
- Return the guava purée to the pan and cook over low heat for another 15 minutes, stirring occasionally, until the syrup thickens
- If the syrup becomes too thick during cooking, add the optional half cup of water to adjust the consistency
- Let the guava syrup cool completely before serving over the flan
