Ingredients
1/2 cup strong brewed coffee
1 teaspoon ground cinnamon
1 teaspoon baking powder
3 cups sugar
500 g raw peanuts with skin
1 tablespoon chocolate powder
1 teaspoon ground cinnamon
1 teaspoon baking powder
3 cups sugar
500 g raw peanuts with skin
1 tablespoon chocolate powder
Where to find ingredients
In Solomon Islands, peanuts, sugar, coffee, cinnamon, baking powder and cocoa or chocolate powder are available from markets, supermarkets and grocery shops. Raw peanuts with skin are ideal for the proper coating.
Preparation method
- In a pan, combine the sugar with the strong brewed coffee and place over medium heat
- Stir continuously until the sugar dissolves and the syrup starts to thicken
- Add the raw peanuts with skin, chocolate powder, cinnamon and baking powder to the pan
- Mix all the ingredients well in the hot syrup until the mixture starts to dry and come away from the bottom of the pan
- Once it reaches the dry point, remove the pan from the heat
- Pour the peanut mixture into a previously greased baking tray
- Place in a preheated oven at a very low temperature, about 120°C, for around 15 minutes
- During the oven time, stir the peanuts occasionally to stop them sticking to the tray and to help them dry evenly
- Remove from the oven and let cool completely before serving or storing
