Ingredients
1/2 cup raw rice
1 egg
1 tablespoon chopped parsley
1 tablespoon chopped cilantro
1/2 tablespoon chopped chives
1 1/2 cups wheat flour
Salt to taste
Water as needed to cook the rice
8 tablespoons vegetable oil (for cooking the dough and boiling water)
1 egg
1 tablespoon chopped parsley
1 tablespoon chopped cilantro
1/2 tablespoon chopped chives
1 1/2 cups wheat flour
Salt to taste
Water as needed to cook the rice
8 tablespoons vegetable oil (for cooking the dough and boiling water)
Where to find ingredients
Find fresh produce and staples at local markets or grocery stores. For specialized ingredients like cilantro and fresh chives, local farm stalls are ideal. Use all-purpose flour for the wheat flour requirement.
Preparation method
- Cook the rice in salted water until it is very soft
- Drain any excess water if necessary
- In a blender, process the cooked rice with the egg, parsley, cilantro, and chives until the mixture is homogeneous
- Transfer the dough to a saucepan
- Gradually add the wheat flour, mixing well
- Place the pan over low heat, cooking the dough while stirring constantly until it releases completely from the bottom of the pan, forming a ball
- Season with salt to taste
- Remove the dough from the pan and let it cool slightly
- On a clean, lightly floured surface, roll the dough into a rope about 2 cm in diameter
- Cut the gnocchi into pieces approximately 2 cm long
- In a large pot, bring plenty of water to a boil with salt and about 4 tablespoons of vegetable oil
- Add the gnocchi to the boiling water in small batches to prevent sticking
- Remove the gnocchi from the water as soon as they float to the surface, indicating they are cooked
- Drain the cooked gnocchi and, if desired, finish by sautéing them in a pan with the remaining vegetable oil or serve directly with your favorite sauce
Observations
Rice gnocchi is an intriguing variation of the traditional Italian pasta, adapted to Brazilian palates using cooked rice as the base. This homemade recipe is an excellent choice for those seeking a different, flavorful, and relatively straightforward dish to prepare. The combination of cooked rice with egg, fresh herbs, and wheat flour creates soft gnocchi with a distinct texture, perfect for serving with your preferred sauce.
