Where to find ingredients
In Solomon Islands, sliced bread, condensed milk, eggs, vanilla, oil, sugar and cinnamon are available from supermarkets and grocery shops. Day-old bread is best because it soaks without falling apart.
Preparation method
- Cut each slice of bread into four equal pieces
- In a deep bowl, make a mixture by combining the condensed milk with the water and vanilla essence
- Pass the bread pieces through the liquid mixture, letting them become well soaked
- Dip each moistened piece into the previously beaten eggs
- Remove from the egg and wait a few moments so the excess liquid can drain
- Heat the oil and fry the rabanadas at a moderate temperature so they brown evenly
- Transfer the rabanadas to a container lined with paper towel to remove excess oil
- Finish by sprinkling a mixture of sugar and cinnamon over the slices while still warm before serving
Observations
This version uses sliced bread for neat, delicate pieces. The secret is letting the bread soak up the liquid well before frying, while keeping the oil at a moderate heat so each piece browns evenly.
