Ingredients
100g sugar
2 tablespoons chopped cashew nuts
2 medium papayas, with fresh pulp
250ml double cream for whipping
2 tablespoons chopped cashew nuts
2 medium papayas, with fresh pulp
250ml double cream for whipping
Where to find ingredients
You can find fresh papayas at local Honiara markets or supermarkets like S-Mart. Look for double cream in the refrigerated dairy section; if you can't find it, heavy whipping cream is a perfect substitute. Raw cashew nuts are usually stocked in the snacks or baking aisle of major grocery shops, or you can find them in bulk at local dry good stalls. If you can't find raw ones, roasted salted cashews work too—just make sure to wipe off the excess salt.
Preparation method
- Slice the papayas in half and scoop out all the seeds
- Take the pulp from one papaya and whiz it in a food processor until smooth
- Dice the pulp of the second papaya into small chunks and set aside
- In a mixing bowl, whip the double cream and sugar together until you get stiff, firm peaks
- Gently fold the papaya puree into the whipped cream, being careful to keep it light and airy
- Fold in the diced papaya pieces as gently as possible
- Pour the mixture into an ice cube tray or a freezer-safe container and leave it to firm up in the freezer for at least 4 hours
- When you're ready to serve, briefly run the bottom of the container under warm water to loosen it
- Scoop the sorbet into bowls and scatter the chopped cashews over the top
- If you fancy a bit of zing, add a squeeze of fresh lime juice over the top just before serving
