Where to find ingredients
You can find fresh potatoes, butter, and eggs at local markets or general grocers. If you have trouble finding a piping bag, a sturdy freezer bag with a corner snipped off serves as a practical substitute.
Preparation method
- Peel the potatoes and place them in a pot with water.
- Place over high heat until it reaches a boil.
- Add salt and cook for approximately 20 minutes or until fork-tender.
- Drain all the water and pass the potatoes through a ricer or masher.
- Mix the butter and egg yolks thoroughly into the mashed potatoes.
- Season with salt, black pepper, and nutmeg, stirring to incorporate all the flavors.
- Transfer the mixture to a piping bag fitted with a wide star tip.
- Preheat your oven to 180°C (350°F).
- Grease a baking sheet with butter and lightly dust with wheat flour.
- Pipe the potato roses onto the baking sheet by pressing the piping bag.
- Begin in the center and pipe in a spiral motion to create the rose shape.
- Keep a consistent space between each portion on the tray.
- Bake in the preheated oven for about 30 minutes or until the tops are lightly golden.
- Remove from the oven and serve immediately.
Observations
