Potato and Tuna Casserole (Torta de batata com atum)

Ingredients

4 large potatoes, boiled and mashed
2 eggs
1/2 tbsp pure olive oil (for the dough)
2 tbsp olive oil (for the filling)
1 clove of garlic, minced
1 medium onion, chopped
2 tomatoes, peeled and seeded, chopped
1/2 bell pepper, sliced into thin strips
1 can flaked tuna
1 pinch of salt
1 pinch of black pepper
1 pinch of oregano
1/2 cup water

Where to find ingredients

You can find fresh produce like potatoes, onions, and tomatoes at local public markets (palengke) or supermarket vegetable sections. Flaked tuna is widely available in the canned goods aisle of any local grocery store. For the olive oil and herbs, check the international or baking aisles in major supermarkets.

Preparation method

  1. In a mixing bowl, combine the mashed potatoes, eggs, and 1/2 tablespoon of olive oil. Set aside.
  2. Heat 2 tablespoons of olive oil in a pan and sauté the minced garlic.
  3. Add the chopped onion and sauté until translucent.
  4. Stir in the chopped tomatoes and bell pepper strips. Season with salt, black pepper, and oregano.
  5. Pour in the 1/2 cup of water and simmer for about 5 minutes, or until the vegetables are tender.
  6. Fold the flaked tuna into the pan and cook for another 3 minutes, stirring well to achieve a consistent sauce.
  7. Spread the tuna filling over the mashed potato base in a baking dish.
  8. Bake in a preheated oven at 180°C for approximately 15 minutes, or until lightly golden.
  9. Serve the dish hot, accompanied by steamed rice and a glass of white wine, if desired.
