Ingredients
300g all-purpose flour
200g butter
100g sugar
1 egg yolk
2 tablespoons red wine (divided)
6 tart red apples (approx. 1kg)
100g seedless white raisins
200g butter
100g sugar
1 egg yolk
2 tablespoons red wine (divided)
6 tart red apples (approx. 1kg)
100g seedless white raisins
Where to find ingredients
You can find all-purpose flour, butter, sugar, and raisins at your local supermarket's baking aisle. For the apples, check the produce section of local wet markets (palengke) or supermarkets; look for firm, crisp varieties such as Gala or Fuji. Use any accessible red table wine for the recipe.
Preparation method
- Cream the butter and sugar together until the mixture is smooth and homogeneous.
- Add the egg yolk and one tablespoon of the red wine to the creamed mixture.
- Gradually incorporate the flour into the dough.
- Work the dough until it is uniform in texture.
- Be mindful that this particular dough will have a somewhat oily and tacky consistency.
- Divide the dough into two portions, using 2/3 for the base and 1/3 for the top.
- Let both portions of the dough rest in the refrigerator for 30 minutes.
- Peel the apples and slice them into medium-sized pieces.
- Combine the sliced apples with the remaining tablespoon of red wine and the raisins.
- Steam the mixture until the apples have softened sufficiently.
- Line the bottom and sides of a springform pan with the larger portion of the dough.
- Spread the apple filling evenly over the prepared base.
- Roll out the smaller portion of the dough to create thin strips.
- Arrange these strips over the filling to create a lattice pattern.
- Bake in a medium-heat oven until the top of the tart is golden brown.
Observations
This traditional dessert brings together a buttery, shortcrust-style pastry with a bittersweet filling of apples and raisins. It is an excellent choice to serve alongside coffee or as a centerpiece for special gatherings.
