Where to find ingredients
Find whole turkeys and fresh produce at local markets like those in Port Moresby. Imported items such as dry white wine, cornmeal, and high-quality olive oil are available at major supermarkets. Use butter as a reliable substitute for margarine if preferred.
Preparation method
- Blend the first cup of wine, first cup of chicken stock, chopped onions, garlic, mustard, hot sauce, margarine or butter, and salt in a blender.
- Pour the mixture into a container, stir in the remaining wine and stock, and set aside for later use.
- Sauté the chopped turkey giblets in a pan with the oil and olive oil over low heat until browned.
- Stir in the cornmeal, powdered chicken stock, cubed bananas, breadcrumbs, and black pepper, stirring continuously to create a loose, moist farofa.
- Remove from the heat, fold in the spring onions and parsley, and stuff the turkey.
- Place the stuffed turkey into a roasting pan without greasing it.
- Prick the turkey all over with a fork and pour the reserved sauce over it.

Observations
The Brazilian-style roast turkey is a centerpiece dish traditionally served during celebrations, prized for both its deep flavor profile and practical preparation method. To begin, blend the dry white wine, chicken stock, chopped onion, garlic, mustard, hot sauce, margarine or butter, and salt in a blender until smooth. Pour this marinade into a large dish, incorporate the remaining wine and stock, stir well, and set aside. In a pan over low heat, sauté the chopped turkey giblets in a blend of oil and olive oil until they change color. Add the cornmeal, powdered chicken stock, cubed banana, grated onions, and black pepper, stirring constantly until you achieve a crumbly, moist farofa mixture. Once off the heat, stir in the chopped spring onions and parsley, then use this mixture to stuff the turkey. Place the stuffed bird into a roasting pan; no need to grease it. Prick the skin with a fork and baste it generously with the reserved sauce. Secure the cavity with skewers and tie the turkey legs together. Cover with foil and bake in a preheated oven for about 90 minutes, basting frequently with the pan juices. Finally, remove the foil and continue roasting for another 90 minutes until golden brown, ensuring you keep basting periodically. Serve the turkey on a platter, garnished with extra farofa and fresh herbs.
