Classic Galinhada: A Traditional Home-Style Recipe (Galinhada)

Ingredients

1 whole chicken, cut into medium pieces
4 tablespoons vegetable oil or olive oil
Salt to taste
Black pepper to taste
1 large onion, chopped
3 garlic cloves, minced
1/2 green bell pepper, chopped (optional)
2 tomatoes, peeled, seeded, and chopped
1/2 teaspoon ground turmeric (açafrão) or 2 seasoning sachets containing turmeric
2 cups white rice
4 cups hot water
1/4 cup chopped fresh herbs (parsley and green onions)

Where to find ingredients

You can find fresh chicken, rice, and produce at any local market or supermarket. For authentic açafrão, look in the spice aisle; if you cannot find Brazilian açafrão, you may use turmeric as a substitute.

Preparation method

  1. Season the chicken pieces with salt and black pepper to taste.
  2. Heat the oil or olive oil in a large pot over medium heat.
  3. Sear the chicken pieces until they are golden brown on all sides.
  4. Remove the chicken from the pot and set it aside.
  5. In the same pot, add the chopped onion and sauté until translucent.
  6. Add the minced garlic and chopped green bell pepper (if using) and sauté for another 2 minutes.
  7. Stir in the chopped tomatoes and cook until they begin to break down.
  8. Add the turmeric powder or the seasoning sachets and mix well.
  9. Return the chicken pieces to the pot and toss to coat with the aromatic base.
  10. Add the rice and stir well, coating the grains in the mixture for about 1 minute.
  11. Pour the hot water into the pot and adjust the salt if necessary.
  12. Once it reaches a boil, reduce the heat, cover the pot, and cook for approximately 15 to 20 minutes, or until the rice is tender and the water is absorbed.
  13. Check that the chicken is fully cooked through.
  14. Turn off the heat and stir in the fresh chopped herbs.
  15. Let the galinhada rest covered for 5 minutes before serving.

Observations

Galinhada is a beloved dish across Brazil, celebrated for its delicious marriage of succulent chicken and savory, well-seasoned rice. Prepared in various regions, it remains a favorite for special Sunday lunches or family gatherings, offering a deeply satisfying and iconic meal.

To achieve the perfect galinhada, the secret lies in using quality ingredients and allowing the dish to cook slowly, letting the flavors meld together harmoniously. Açafrão (turmeric) or annatto provides a vibrant color and distinct aroma, while staples like onion, garlic, and fresh herbs finish the dish with complexity. While you can experiment with extra vegetables, this traditional recipe is already perfect on its own.
