Traditional Baiao de Dois (Baião de dois)

Ingredients

2.5 litres cold water
500 g fresh green beans
2 beef stock cubes
3 tablespoons vegetable oil
1 paio sausage, sliced
1 onion, grated
1 garlic clove, crushed
1/2 tablespoon chopped coriander
2 1/2 cups white rice
150 g coalho cheese, thinly sliced

Preparation method

  1. Soak the green beans in water overnight.
  2. The next day, drain the beans and cook them in a pot with 2.5 litres of cold water and the beef stock cubes.
  3. Cover the pot and cook over low heat for approximately 1 hour, or until the beans are tender.
  4. While the beans are cooking, heat the oil in a separate pot.
  5. Brown the sliced paio sausage, grated onion, and crushed garlic in the oil.
  6. Add the washed and drained rice and the chopped coriander to the sauté, and cook for a few minutes.
  7. Add the cooked beans along with the cooking liquid to the rice mixture.
  8. Stir all ingredients together, cover the pot, and cook over low heat until the rice is tender and the mixture is moist and creamy.
  9. Distribute the thin slices of coalho cheese over the top of the rice.
  10. Cover the pot again and let the steam melt the cheese for a few minutes.
  11. Serve the Baiao de Dois hot, accompanied by fried or roasted carne-de-sol, if desired.
