Sautéed Escarole with Spicy Peanuts (Escarola refogada com amendoim picante)

Ingredients

1/2 large head of escarole
1/3 cup roasted, skinless, unsalted peanuts
2 garlic cloves
Olive oil to taste
1/4 teaspoon cayenne pepper
Salt to taste

Where to find ingredients

You can find escarole (often labeled as broad-leaved endive) in the produce section of local supermarkets like Countdown or New World. If unavailable, Swiss chard makes a suitable substitute. Look for raw or roasted nuts in the baking or bulk health food aisles.

Preparation method

  1. Separate the escarole leaves and wash them thoroughly under running water.
  2. Dry the leaves well using a salad spinner to ensure they are crisp.
  3. Stack about 5 leaves, roll them into a tight cylinder, and slice into 3 cm ribbons.
  4. Crush the garlic cloves with the flat side of a knife to peel them, keeping them whole to infuse the oil.
  5. Heat a large non-stick frying pan over medium heat.
  6. Add a splash of olive oil, the peanuts, cayenne pepper, and a pinch of salt.
  7. Sauté the peanuts for about 3 minutes until they turn lightly golden.
  8. Remove the peanuts from the pan and set aside in a small bowl.
  9. In the same pan, still over medium heat, add 1 1/2 teaspoons of olive oil and one garlic clove.
  10. Sauté the garlic for 1 minute just to fragrance the oil.
  11. Add half of the escarole, season with a pinch of salt, and sauté for 2 minutes.
  12. Stir occasionally until the leaves are slightly wilted but still maintain texture, being careful not to let them release too much water.
  13. Remove the first batch of escarole and repeat the process with the remaining leaves.
  14. Arrange the sautéed escarole on a serving platter and finish by sprinkling the spicy peanuts over the top before serving.

Observations

This side dish adds a delightful crunch and a subtle spicy kick that elevates the flavor profile of the greens. It is an excellent choice for a nutritious, quick way to brighten up your daily vegetable repertoire.
