1 kg of neck pumpkin (or butternut squash)

Neck pumpkin, also known as butternut squash, is widely available in the produce section of most supermarkets. For a more authentic Brazilian flavor, look for 'abóbora de pescoço' at Latin or Brazilian specialty markets.
Preparation method
- Peel the pumpkin and cut the flesh into cubes of about 2 cm
- Finely chop the garlic cloves
- Heat a large pot or skillet over medium heat with the olive oil
- Add the garlic and sauté for 1 minute just to flavor the oil, being careful not to burn it
- Add the pumpkin cubes and salt to the pot
- Stir occasionally for 10 minutes, until the pumpkin begins to soften
- Cover the pot and reduce the heat to low
- Let it cook for 5 minutes so the pumpkin finishes softening in its own steam
- Remove the lid and continue stirring while mashing the pieces with the back of a wooden spoon, until you reach your preferred texture
- Turn off the heat and serve immediately
