Where to find ingredients
Most ingredients can be found in the dairy, produce, and baking aisles of your local supermarket. Specialty items like coconut milk are often in the international foods section or the beverage aisle. Ham and cheeses are available at the deli counter or pre-packaged in the dairy section. Canned tomato sauce and olives are standard supermarket items. Dried herbs like oregano are in the spice aisle. If you can't find fresh olives, jarred or canned are fine substitutes.
Preparation method
- In a blender, combine the coconut milk, eggs, milk, oil, all-purpose flour, cornstarch, baking powder, and salt until a homogeneous batter is achieved
- Set the batter aside
- In a separate bowl, mix the chopped onion, chopped olives, tomato sauce, 1 tablespoon of dried oregano, and salt to taste
- Set the filling aside
- Grease a rectangular baking dish (approximately 28 cm x 19 cm x 5 cm) with margarine and dust with all-purpose flour
- Pour half of the reserved batter into the prepared dish
- Evenly distribute the chopped ham, chopped mozzarella, and tomato sauce filling over the batter
- Cover the filling with the remaining batter
- Sprinkle grated Parmesan cheese and dried oregano to taste on top
- Bake in a preheated oven at medium temperature (180°C) for approximately 45 minutes, or until the cake is golden and firm
