Look for corn flour, cassava flour, tinned sardines, peas, boiled eggs, chopped parsley and spring onion, black olives, tomatoes, palm hearts, tomato sauce, and shrimp in well-stocked supermarkets, open markets, and canned goods aisles. If needed, use prawns as a substitute for shrimp.
Preparation method

- Cook over medium heat, adding water and salt to taste, until it forms a thick, flavourful sauce
- In a separate bowl, mix the corn flour and cassava flour
- Pour the hot sauce over the flours a little at a time, stirring continuously, until you get a moist, even mixture
- Preheat a cuscuzeiro
- Transfer the mixture to the cuscuzeiro, shaping the cuscuz
- Decorate the top with the boiled eggs and the tinned sardines
- Cook the cuscuz in a bain-marie over low heat for about 20 to 30 minutes, or until firm and cooked through
