Classic Savoury Minced Meat Pancakes (Panqueca de carne moída)

Ingredients

1 1/2 cups all-purpose flour
1 cup milk
2 large eggs
4 tablespoons vegetable oil
Salt to taste
300g minced beef
2 tablespoons finely chopped or grated onion
1/2 tomato, diced
1/2 tin tomato paste
1 pack (200g) table cream (creme de leite)
Salt to taste
400g sliced mozzarella cheese
Grated hard cheese to taste

Where to find ingredients

You can find all ingredients at local supermarkets, such as Shoprite or Spar. Table cream (creme de leite) is often found in the long-life dairy aisle. If unavailable, use a high-fat heavy cream as a substitute. Mozzarella is widely available in the deli section.

Preparation method

  1. In a blender, beat the eggs, milk, and oil until smooth.
  2. Gradually add the all-purpose flour and blend until you achieve a smooth, creamy batter.
  3. Season the batter with salt to your liking.
  4. Heat a non-stick frying pan over medium heat and lightly grease it with a little oil.
  5. Pour one ladle of batter into the hot pan.
  6. Tilt and rotate the pan to ensure the batter covers the base evenly.
  7. Cook until the edges lift away from the pan, then flip to lightly brown the other side.
  8. Remove the pancake from the pan and set aside; repeat until all batter is used.
  9. In a separate saucepan, sauté the chopped onion in a drizzle of oil until translucent.
  10. Add the minced beef and cook, stirring frequently, until the liquid evaporates.
  11. Lower the heat, cover the pan, and allow it to simmer for a few minutes.
  12. Add the diced tomato and cover again to soften.
  13. Cook for a further 3 minutes and stir to combine.
  14. Stir in the tomato paste and season with salt as preferred.
  15. Continue to cook for about 10 minutes or until the sauce thickens.
  16. Turn off the heat and allow the meat sauce to cool slightly.
  17. Stir in the table cream until the sauce is smooth and homogeneous.
  18. Return to low heat for 5 minutes to warm through.
  19. To assemble, place a slice of mozzarella and a spoonful of the meat sauce onto each pancake.
  20. Roll up each pancake carefully.
  21. Lightly grease a baking dish with a small amount of the remaining sauce.
  22. Arrange the filled pancakes side-by-side in the baking dish.
  23. Cover the pancakes with the rest of the meat sauce.
  24. Sprinkle generously with the grated hard cheese.
  25. Bake in a preheated medium-temperature oven for approximately 20 minutes, or until the cheese is melted and golden brown.
