Sun-dried Beef in Stuffed Pumpkin: A Creamy Traditional Dish (Carne seca na moranga)

Ingredients

1 kilogram sun-dried beef, cooked, shredded, and fat removed
2 cloves garlic, minced
200 grams table cream
Salt and black pepper to taste
200 grams tomato pulp
1 medium pumpkin, cleaned and seeded
200 grams creamy requeijão
Fresh herbs to taste
4 tablespoons olive oil
1 onion, grated

Where to find ingredients

Sun-dried beef can be found in specialized butchers; if unavailable, use salt-cured beef as a substitute. Creamy requeijão is a specific Brazilian processed cheese spread, available in specialty markets; cream cheese can serve as a substitute if needed.

Preparation method

  1. Cut a small lid from the top of the pumpkin and remove the seeds with a spoon
  2. Wash the pumpkin and the lid thoroughly
  3. Place water in a large pot to boil
  4. Without touching the water, place the pumpkin upside down over the pot to steam until tender, approximately 30 minutes
  5. Do the same with the lid
  6. Remove the pumpkin from the steam and let it cool slightly
  7. Set aside
  8. In a pan, heat the olive oil and sauté the garlic and onion until golden
  9. Add the tomato pulp, salt, pepper, and fresh herbs
  10. Mix well and add the shredded sun-dried beef
  11. Cook for a few minutes to incorporate the flavors
  12. Stir in the table cream and half of the creamy requeijão
  13. Mix until you obtain a creamy and homogeneous filling
  14. Carefully spread the remaining half of the requeijão inside the reserved pumpkin
  15. Fill the pumpkin with the beef and sauce mixture
  16. Garnish with fresh herbs on top
  17. Place the stuffed pumpkin in a preheated oven at 180°C for about 20 minutes or until heated through and lightly browned
  18. Serve immediately, accompanied by white rice or a fresh salad
