Creamy Chicken in Roasted Squash (Frango na moranga)

Ingredients

1 medium moranga squash, washed
4 tablespoons vegetable oil
1/2 tablespoon vegetable seasoning paste
200g requeijão cremoso
1kg chicken breast, cut into cubes
1 pinch black pepper
2 tablespoons lemon juice
2 onions, finely chopped
1 garlic clove, crushed
3 tomatoes, peeled, deseeded, and chopped
1 red chili pepper, finely chopped
2 vegetable bouillon cubes
1 tablespoon all-purpose flour
1 cup coconut milk
1 can table cream (creme de leite)
1 tablespoon green onions, chopped
1 tablespoon parsley, chopped

Where to find ingredients

You can find fresh produce, including squash, at local farmers' markets or larger supermarkets. For specific Brazilian ingredients like 'requeijão cremoso' or 'creme de leite', check the international aisle of well-stocked grocers or specialty food stores. If 'requeijão' is unavailable, a thick cream cheese or soft, spreadable processed cheese makes a suitable substitute.

Preparation method

  1. Wrap the entire squash in aluminum foil.
  2. Place on a baking tray and bake in a preheated oven at 180ºC for about 1 hour and 30 minutes, or until the flesh is tender.
  3. Remove from the oven and discard the foil.
  4. Slice a lid off the top of the squash.
  5. Scoop out all the seeds using a spoon.
  6. Brush the outer skin of the squash with 1 tablespoon of oil.
  7. Spread a mixture of the vegetable seasoning and the requeijão cremoso inside the squash cavity.
  8. Keep the squash warm while preparing the filling.
  9. Season the chicken cubes with black pepper and lemon juice in a mixing bowl.
  10. Set the seasoned chicken aside.
  11. Heat the remaining oil in a large pan and sauté the onion and garlic until translucent.
  12. Add the chicken cubes to the pan.
  13. Sauté for about 10 minutes until the chicken changes color and softens.
  14. Stir in the chopped tomatoes, red chili, and the vegetable bouillon cubes.
  15. Pour in the flour, previously dissolved in the coconut milk, to thicken the sauce.
  16. Cook for a few minutes, stirring constantly until the bouillon cubes are fully dissolved.
  17. Turn off the heat.
  18. Gently fold in the table cream, green onions, and parsley.
  19. Mix well and spoon the creamy chicken filling into the squash cavity.
  20. Place back into the oven for a few minutes to gratinate if you prefer a lightly browned top.

Observations

This recipe is an ideal choice for festive gatherings or special family meals. By serving the spiced chicken directly inside the hollowed-out squash, you ensure both a stunning presentation and a depth of flavor that is truly memorable.
