Braised Chicken with Onions (Frango acebolado)
Homestyle braised chicken with tender thighs simmered in an aromatic onion and tomato sauce. An easy, satisfying dish for lunch or dinner.

Ingredients
1 kg chicken thighs, skinless and boneless
3 cloves garlic, crushed
1/4 cup vinegar
3 bay leaves
Salt to taste
1 tablespoon vegetable oil
2 medium onions, sliced
2 ripe tomatoes, sliced
1 tablespoon oregano
1/2 tablespoon dried red pepper flakes (optional)
1/2 litre chicken stock
1/2 cup chopped fresh herbs (parsley and spring onions)

Look for the chicken, herbs, and pantry items in the poultry section, fresh produce aisle, and spices shelf at your local supermarket or market. If needed, substitute vegetable stock for chicken stock, but keep the original stock as the preferred choice.
Preparation method
- In a bowl, season the chicken thighs with crushed garlic, vinegar, bay leaves and salt. Leave to marinate for at least 1 hour
- Heat the oil in a large pan over medium-high heat
- Brown the marinated chicken thighs on all sides
- Add the sliced onions and tomatoes to the pan, stirring gently with the chicken
- Sprinkle the oregano and dried red pepper flakes, if using, over the ingredients in the pan
- Pour the chicken stock into the pan
- Cover the pan and cook over low heat for about 10 minutes after it starts boiling, until the chicken is tender and the sauce has thickened
- Finish with the chopped fresh herbs and serve hot
