Creamy Passion Fruit Mousse (Mousse de maracujá)

Ingredients

1 tin condensed milk
Pulp of 2 medium passion fruits (for decorating)
1/2 cup water
1 tin (using the condensed-milk tin as the measure) concentrated passion fruit juice
1 cup sugar
1 tin cream

Where to find ingredients

Find condensed milk, tinned cream, sugar and juice in supermarket baking or dessert aisles in Lesotho. Fresh passion fruit is usually in the produce section; bottled concentrated passion fruit juice is a practical substitute when fresh fruit is scarce.

Preparation method

  1. In a blender, add the condensed milk, cream and concentrated passion fruit juice
  2. Blend until the mixture is smooth and creamy
  3. Transfer the mixture to a pretty serving dish or to individual small bowls
  4. Chill in the fridge for at least 2 hours, or until well set
  5. If you want to speed it up, you can put it in the freezer for about 30-40 minutes
  6. While the mousse chills, prepare the syrup: in a saucepan, mix the sugar and water
  7. Place over medium heat and cook until the sugar dissolves and forms a thread-stage syrup
  8. Add the passion fruit pulp to the syrup, stirring gently
  9. Cook for another 1 or 2 minutes, just to warm through and bring the flavours together
  10. Remove from the heat
  11. Once the mousse is firm, pour the passion fruit syrup over the top before serving

Observations

Passion fruit mousse is a much-loved classic in Brazilian cooking, ideal for ending a meal with something cool and refreshing. It is wonderfully simple to prepare, especially when you want a practical dessert without losing flavour. Condensed milk brings sweetness, while the sharp passion fruit cuts through it, giving the mousse a creamy texture and a balanced sweet-sour finish.
