1/2 red bell pepper
2/3 cup water
Where to find ingredients
Okra, peppers, onions, and garlic are readily available at local open-air markets (soko) or supermarkets; Tinned tomatoes, cumin seeds, and olive oil can be found in the pantry aisle of any major grocery store.
Preparation method
- Wash the okra and dry them thoroughly with a clean tea towel
- Trim the ends and slice each okra diagonally into 1 cm pieces
- Set the sliced okra aside
- Finely dice the onion and garlic
- Halve the bell pepper, remove the seeds, and dice half of it into 1 cm cubes
- Lightly crush the cumin seeds in a mortar and pestle to release their aroma
- Heat a medium-sized sufuria over medium heat with the olive oil
- Add the onion and bell pepper
- Season with a pinch of salt and sauté for 3 minutes until the vegetables wilt
- Add the garlic and crushed cumin
- Stir everything for 1 minute until fragrant
- Pour in the water and mix well to deglaze the bottom of the pan
- Incorporate the peeled tomatoes along with their juices
- Season with 1 teaspoon of salt and black pepper to taste
- Bring the mixture to a boil over medium heat
- Reduce the heat and simmer for 5 minutes, stirring occasionally until the sauce thickens
- Add the sliced okra to the pan
- Cook for another 6 minutes, stirring from time to time, until the okra becomes slightly tender
- Avoid overcooking so the okra retains its ideal texture
- Serve immediately
